My mom woke up one day to all of a sudden find that a lot of foods were her enemy. Doctors can not find medical reasoning for this but she has found that cutting gluten, wheat, peanuts, and dairy out of her life works best.
I love making new recipes for her. I love researching about foods. I love chips and dip. And I love when she enjoys new foods. So I’m giving you the opportunity to do the same.
First I took 1.5 avocados (because I ate the other half yesterday with lunch) and smashed them all up. Next I made some homemade mayo. (Recipe below.) If you’ve never done this before, you’re missing out! I haven’t bought mayo in almost two years since discovering this! I added lots of dill, garlic powder, salt, parsley, chives and lime juice to my avocado bowl. Last step, I mixed half a cup of mayo with the avocado mixture! Let this sit for an hour or so in the fridge then test it to see if you need more salt, dill, lime juice, ect. If you add more let it sit a little longer then pull out the chips and dig in!!
avocado dill paleo chip dip ingredient list
1 & 1/2 avocados
1/2 cup homemade mayo
3-4 tablespoons dill
3-4 tablespoons lime juice
1 tablespoon garlic powder
1 teaspoon parsley
1 teaspoon chives
1 teaspoon salt
simple 30 second homemade mayo
1/2 cup grapeseed oil
1 egg
1 tablespoon lemon juice
salt, pepper, garlic powder to taste
Combine all ingredients in a measuring cup. Use an immersion blender for 30 seconds. If the mayo is too thin, add a small amount of oil and blend again. Keep adding until your desired consistency.
